Book aims for lighter meals
#1 New York Times bestselling author Bobby Deen introduces a new cookbook of 120 recipes under 350 calories taking 30 minutes or less in “Bobby Deen’s Everyday Eats.”
Deen writes that he wanted to produce a book for busy weeknight cooks to get a healthy dinner to the table fast that will become a favorite resource. This collection of recipes has plenty of variety awaiting busy families!
The book is divided into Salad Meals, Soup Suppers, Seafood, Poultry, Meat, Meatless Mains, Fire Up the Grill, Seasonal Sides, Good for You Grains and Sweet Dreams. Most of the recipes serve between 4 and 6. There is also a section on stocking your pantry as well as a few instant weeknight meals from the pantry, a section on dining out smart and a week of 1,500 calorie-a-day menus.
Salad Meals has recipes for Deviled Egg Salad, Shrimp Taco Salad and Buffalo Chicken Salad.
Soup Suppers include recipes for hearty and healthier recipes like Black Bean and Turkey Sausage Soup, Lemony Greek Chicken Soup with Spinach and Sausage and Pepper Pot with Collard Greens.
Seafood recipes include Light and Easy Scallops and Grits, Spicy Tuna Pasta with Olives and Tomatoes and Pan-Fried Tilapia with Cajun Butter.
Poultry recipes include Peachy Pulled BBQ Chicken, One-Pan Roasted Chicken and Broccoli and Turkey Cutlets Florentine.
Meat recipes include Mustard-Rubbed Flank Steak, Spinach and Cheese-Stuffed Pork Chops and Mini Meat Loaves.
Meatless Mains has veggie dishes like Italian Vegetable Frittata, Mushroom Spinach Quesadillas and Baked BBQ Tofu.
Fire Up the Grill (this summer!) with recipes like Grilled Cumin Chicken and Potato Salad, Chimichurri Steaks and Grilled Pork Tenderloin Salad.
Seasonal Sides have dishes to add to your mains like Maple-Glazed Carrots, Broiled Herbed Mushrooms and Leomony Cabbage Slaw.
Good for You Grains has dishes like Couscous-Stuffed Peppers, Whole-Wheat Italian Pasta Salad and Creamy Spinach Polenta.
End things on a sweet note with Sweet Dreams like Lighter Chocolate-Mint Shakes, Strawberry Angel Food Cake and Raspberry Mousse.
I made Shrimp Coconut Curry one very busy night. This recipe serves 4 at only 244 calories (not counting the rice to serve with) and came together in about 15 minutes. Using fresh shrimp, coconut milk and curry powder, this dish had a light spiciness and was warm and comforting on a cool night. Everyone loved this dish and gobbled it all up, including the picky youngest, which is a miracle and means that this dish wins the seal of approval from my family! Variations for this recipe include using chicken or making it veggie with mushrooms, both of which sound really good to me too! I’ll definitely be using this book again.
