Cookbook gets decadent with ‘Caramel’
Take some time to make a rich, decadent dessert (or just look at the delicious photos) with “Caramel” by Carole Bloom with photographs by Alexandra Defurio.
The author gives a brief history of caramel and its origins in the introduction of the book and then gets to the good stuff. Bloom writes the recipes are intended for home cooks, but I would say home cooks with plenty of time and experience baking because the recipes may be intimidating to novice cooks.
Each recipe makes use of a basic caramel sauce included in the first chapter of the book, Caramel Techniques and Component Recipes. There’s Classic Caramel Sauce, Dulce de Leche and Caramelized White Chocolate.
The next chapter Cakes, Cupcakes and Brownies includes recipes for such delicious treats as Chocolate and Caramel Layer Cake, Butterscotch Cupcakes with Dulche de Leche Frosting, Caramelized White Chocolate Hazelnut Mini Cakes, Caramel Swirl Cheesecake, Caramel-Layered Dark Chocolate Brownies and more.
The chapter Tarts, Tartlets and a Pie include recipes such as Caramel Coconut Tart, Caramelized Upside-Down Pear Tart, Caramelized Banana Turnover and Chocolate Dulche de Leche Pecan Pie.
